Texas Jalapeño Ketchup, Seasonings & Bloody Mary Mix
Weeknight seafood
Fish fillets dipped in egg and breadcrumbs, drizzled with lemon butter and baked in a very hot oven until golden. All the crunch of fried fish, none of the oil, with SpiceItUp! Jalapeño Ketchup for dipping.
The secret is a 500°F oven. It sets the crumb coating fast, so the outside turns golden while the fish stays tender. Time it by thickness: about 5 to 6 minutes for every half inch.
This recipe comes from the SpiceItUp! recipe collection. See the original oven-fried fish recipe on spiceitup.com.
Heat the oven to 500°F (260°C) and grease a shallow baking pan.
Thaw the fish if frozen and pat it dry. Cut large fillets into 3 pieces.
Dip each piece in beaten egg, then press into the bread crumbs to coat. Arrange in the pan and sprinkle with salt and pepper.
Stir the lemon juice into the melted butter and drizzle it over the fish.
Bake until golden brown and the fish flakes easily with a fork, about 5 to 6 minutes for each 1/2 inch of thickness.
Serve hot with Medium or Hot Jalapeño Ketchup for dipping.
Mix a teaspoon of SpiceItUp! Jalapeño Dusting Salt into the bread crumbs.
Flake the fillets into warm tortillas with slaw and a drizzle of spicy burger sauce.
Use panko instead of fine bread crumbs.
Firm white fish such as cod, haddock, tilapia, catfish or pollock work well. Pan-dressed trout works too.
About 5 to 6 minutes for every 1/2 inch of thickness, until golden and flaky.
Pat the fish dry before coating, do not crowd the pan, and serve right away.
