Recipe
Ingredients
- 2 lb ground beef (80/20)
- 1 cup plain breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1 small onion, finely diced
- 1 1/2 tsp SpiceItUp! Jalapeño Dusting Salt
- 1/2 tsp black pepper
- Glaze: 3/4 cup SpiceItUp! Jalapeño Ketchup (Medium or Hot)
- Glaze: 2 tbsp brown sugar
- Glaze: 1 tbsp apple cider vinegar
Steps
Heat the oven
Heat the oven to 350°F and line a rimmed baking sheet with foil or parchment.
Mix the meatloaf
In a large bowl, combine the breadcrumbs, eggs, milk, onion, Jalapeño Dusting Salt and pepper. Add the ground beef and mix gently with your hands until just combined.
Shape
Shape the mixture into a 9 x 5 inch loaf on the baking sheet.
Make the glaze
Stir together the jalapeño ketchup, brown sugar and vinegar. Spread half over the loaf.
Bake
Bake for 45 minutes. Spread on the remaining glaze and bake 15 to 20 minutes more, until the center reaches 160°F on an instant-read thermometer.
Rest
Let the meatloaf rest for 10 minutes before slicing so it holds together.
Tips
- Go easy on extra salt. The dusting salt seasons the meat, so taste before adding more.
- Leftovers make a great sandwich with an extra swipe of jalapeño ketchup.
